This easy pasta dinner has become one of my go-to recipes when I come home late and have to cook. It's relatively quick and filled with some of my favorite canned vegetables (green beans and mushrooms). I adapted it from a recipe found on the back of the Pasta Sides package, mainly by crossing out the words "or" and "optional."
I'm almost embarrassed to have this as my first blogged recipe because the truth is, I absolutely love cooking from scratch, yet here I am using packaged pasta as a base. However, Knorr's Pasta & Rice Sides were a staple food for me growing up. Maybe it's a comfort, or just a habit that I continue to cook them in my new home.
Butter 'N Herb Pasta
Prep time: 10 minutes Cook time: 13 minutes 3 servings- 2¼ cups water
- 1 package Knorr Pasta Sides - Butter & Herb
- 1 jar (4½ oz) sliced mushrooms, drained
- 1 can (14.5 oz) cut green beans, drained
- 2 Tbsp butter
- 2 cups cut-up chicken
- ½ red bell pepper, chopped
- Bring water and butter to a boil over high heat in large saucepan; stir in Pasta Sides, mushrooms, and green beans.
- Continue boiling over medium heat, stirring occasionally, 3 minutes. Stir in chicken and bell pepper. Cook until chicken is white.
- Sprinkle, if desired, with grated Parmesan cheese.
